Ingredients
  

  • 1 large large cucumber, thinly sliced
  • 4 oz smoked salmon, torn into bite-sized pieces
  • 4 oz cream cheese, softened
  • 2 tbsp Capers drained
  • 1/4 red onion, thinly sliced
  • 1 tbsp fresh dill, chopped Optional
  • 1 tbsp lemon juice
  • 1/2 tsp lemon zest
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions
 

  • In a bowl, whisk together softened cream cheese, lemon juice, olive oil, lemon zest, salt, and pepper until smooth.
  • Add cucumber slices, red onion, and capers to the bowl.
  • Gently fold in the smoked salmon pieces, making sure not to break them apart too much.
  • Toss lightly until everything is evenly coated in the creamy dressing.
  • Garnish with fresh dill and serve chilled.
